Gerry Guadarrama, the man behind the success of Biscocho Haus. In fact, a branch of Biscocho Haus is also located beside the restaurant, a perfect location for those who want to buy pasalubong items to their families and friends before and after traveling. You can pass through Carlitos' and Biscocho Haus on your way to and from the Iloilo Airport.

While we were visiting Carlitos', Gerry and his sister, Kim, who manages the restaurant, treated us with home cooked-quality and fusion meals we can never forget.
We started with Pancit Molo, which is made more delicious with its perfectly made chicken stock and garlicky flavor. Spanish Chorizo Pizza is another must-try. Its thin crust is topped with cheese, onion rings, tomatoes, basic leaves and sprinkled with generous amount of Carlitos'-made chorizo. Their chorizo is also one of the breakfast items, said Kim.Angel's hair pasta is a tricky one to cook, but they have a winner with their Carlitos' Sausage Pasta. The angel hair pasta was topped with olive oil, sausage, basil and paired with garlic toasted bread. Just as it should be.
Lengua was a creamy and tender experience, thus don't miss this when you visit.

I'm not really a lover of steak, but Steak de Teresa is something you can take a bite of again and again. It's tenderloin steak that's so flavorful, I guess they marinated the meat for such a long time. It's paired with carrots, mashed potatoes and bell pepper and topped with creamy mushroom sauce.
Try the Shrimp Tempura too, with its flavorful batter. Dip it in either Japanese soy sauce or Pomodoro sauce.
Carlitos' was derived from Carlos, the name of Gerry and Kim's father. It serves a bit of everything, open at 6 am to 10 pm and serves breakfast until dinner.
