The Ilonggo Breakfast

The food that we can truly call as the Ilonggo breakfast is Arroz Carajuevo, created by Darryl Jake Enarle, the winner in the Open Category for Pamahaw, The Culinary Search for Ilonggo Breakfast held last July 25, 2009 at Robinsons Place Iloilo. For the student category, the winning Ilonggo breakfast was Deceeree Uy’s Linupak Layered Rootcrops. Uy is a student of Central Philippine University while Enarle is a staff at Coffeebreak Smallville.
The criteria for judging: originality, 30 percent; distinctly local (use of at least one local or raw indigenous material listed in a validated research paper, 5 percent; technical preparation (mis en place, sanitation, cooking execution and palatability), 20 percent; nutritional value, 20 percent; economical, 10 percent; easy to cook and affordable, 15 percent; and presentation, 15 percent.
Enarle and Uy won P5,000 cash each, a TV set each and gift packs from sponsors as well as the recognition for creating the food combination that will comprise the Ilonggo Breakfast in hotels, resorts and restaurants.
