US Meat Foodservice Seminar in Iloilo

The U.S. Meat Export Federation (USMEF), a non-profit trade association that aims to promote U.S. Beef, pork, veal, lamb, processed meat and variety meats to the international market, was in the city last November 18, 2006 for a brief Foodservice Seminar and Cooking Demo. USMEF has been providing the international markets, from Moscow to Singapore, with high-quality corn-fed beef and pork for years. The association is funded and supported by the United States Government through the Unites States Department of Agriculture (USDA).

Hotel chefs, restaurant entrepreneurs and managers from all over Panay came to learn from a series of lectures given at the Amigo Terrace Hotel by representatives from USMEF who flew in from their office in Singapore.

USMEF ASEAN Director Eric Choon gave an overview of US Meat Industry, quality and grading systems, proper handling and storage of chilled and frozen meat as well as differences between grass-fed and grain-fed livestocks. On the other hand, USMEF Regional Chef and Foodservice Consultant Sabrina Yin demonstrated the exact cutting and cooking of US Meat cuts and touched some essential topics on principles of cooking like heat sources, rubs and marinades.
