Once again, the St. Therese – MTC Colleges Culinary Team proved to be the undisputed Hotel and Restaurant School in the Philippines to date when they brought home the Bronze Award in Black Box Challenge 2007, a prestigious competition sponsored by the Meat and Livestock Australia.
Being the first H.R.M. school that joined and won in this contest is not an easy task. The team had to set the standard that has to be at par with five-star hotels and restaurants in Manila. True enough, they proved their worth in beating the top players in the industry.
Table Setting
Among the competitors were Lolo Dad's Café, Edsa Shangrila, Makati Shangrila, Palms Country Club, Mezzaluna and Chef Laudico's Bistro Filipino.
Only the best ingredients were used by the St. Therese Culinary Team on their menu. The menu included Lamb Rump for Appetizers, Beef Rump for Main Course and Chocolate for Dessert.
The Lamb Rump included Spiced Lamb in Cumin, Rosemary Sauce and Smoked Emince of Lamb Cones in Oyster Teriyaki Sauce, Roasted Tomato and Basil Emulsion and Balsamic Glaze.
The winning entry
The Beef Rump included Slowly Braised Beef with Mixed Nuts and Cream Cheese Crust and Oven Roasted Rump of Beef in Three Peppercorn Sauce, Pears and Shallot Chutney, Potato Pumpkin Cake, Broccoli Mousse Roasted Bell Pepper Dressing.
Chocolate for Dessert included Mint Cones in Strawberry Coulis, White Chocolate on Walnut Macaroon Crust topped with Chili Gelee, Vanilla Bean Cream Brulee with a Duet of Candied Pineapple and Mixed Fruit Compote
It was indeed a standing ovation when St. Therese – MTC Colleges was called onstage. Having a neophyte school making it in the competition and surpassing the professional competitors was surely a history made for MLA Black Box.
