Pâtés have gained such popularity that they have become a staple in every home. More so during the holidays when there are a lot of socializing. This is a perfect item to serve to one's guests or give as gift.
A pâté is a form of spreadable paste that is usually made from meat. One eats this with bread or it can serve as starter. Often, fat, vegetables, herbs, spices, wine and other ingredients are added.
This is what the Pickled Pair Company just did when it came out with several variations of pate as well as pesto and tapenade like Gourmet Queso de Bola, Garlic Queso de Bola, Sun Dried Tomato Pesto, Chicken Liver Pate, and Smoked Fish, Olive and Caper Tapenade.
The Pickled Pair Company is owned by Pia Nava Gueco and Ajeeh Sarria, both food connoisseurs and splendid cooks here in Iloilo City. They made waves with their summer cooking class for children this year and since then, they ventured into this business.
The idea for this business actually came before Pia and her late husband Jundy, got married. "We planned to put up a small and home based company that makes breads, dips, marinade and pickles. Since I love pickles, we called it the Pickled Pair. Although it was shelved, I kept the business plan. I unearthed it when I went home to Manila to fix the place. So, Ajee and I became partners and now it's a girl and girl pickle," Pia said.
Ajeeh went on to explain the different tastes of their products.
Gourmet Queso de Bola is creamy and rich and it has the distinct taste of Queso de Bola. "We use the higher end Queso de Bola," she said.
Garlic Queso de Bola makes use of roasted garlic. It is a bit spicy compared to the Gourmet Queso de Bola.
The Sun Dried Tomato Pesto is nutty and earthy. "You can actually use it as pasta sauce if you add more olive oil," Pia said.
"The Chicken Liver Pate is very smooth, full bodied, very rich and very smooth," said Marichel Magalona, The News Today's marketing director, who was among those who tasted the varieties.
Meanwhile, the Smoked Fish, Olive and Caper Tapenade has several layers of taste. "It is salty. It has that earthy taste because of the black olives. It has a more complex taste profile because of the play of its ingredients. You can first taste the olives. Second, the fish. It's followed by a lemony taste. The spice is at the bottom. The longer it stays in your mouth, the more you will experience the interplay of the ingredients," Ajeeh said.
Gourmet Queso de Bola is at P180 (150 grams), Garlic Queso de Bola, P185 (150 grams), Sun Dried Tomato Pesto, P180 (175 grams), Chicken Liver Pate, P185 (200 grams), and Smoked Fish, Olive and Caper Tapenade, P190 (175 grams).
They are also coming up with the Balut Pâté.
"Since this is home made, we need two days ahead to prepare. We make them from scratch. Also, we don't use preservatives, so it has to be consumed in a week," Pia said.
