Island Fusion grills to perfection
Island Fusion Owner Ann Burgess with Purr and Glen Jumayao.Memories of my past Boracay trips came to mind when we stood outside Island Fusion. The sound of party music permeated the air, and I was excited to come in. As we were ushered inside Island Fusion, that island-y feeling grew stronger because of the way the place was designed. The roundish bar had a complete array of cocktails and spirits. Some monkey toys hanging from the “leaves” just above the bar created an atmosphere of “fun.” The wall was painted with azure skies meeting the calm sea, with paintings of coconut trees completed the backdrop.
According to owner Ann Burgess, the design was an imitation of a rainforest in the United States. She and her husband live in the United States. Her husband’s family is engaged in a restaurant business and they wanted to bring the awesome taste of American and Mexican cuisine in Iloilo City, and fuse it with our very own island’s ingredients. Thus, Island Fusion was born.
Grilled Pork Spareribs with three different sauces - Diablo, Honey Hickory Smoked and Tex Mex.Ann is a very gracious and accommodating host. She had us taste varied Island Fusion best sellers that she developed. We started with Potato Flakes with Homemade Ranch Dip. Two kinds of potatoes were used – the regular potato and the sweet variety. Nachos with Mexican Salsa is a good appetizer as well.
For us who shy away from beef, Island Fusion’s Sloppy Jones Burger was such a delight. They used premium lean pork, topped with coleslaw. Lovers of spicy food would definitely relish Chicken Buffalo Wings cooked in Diablo Sauce. Ann suggested that if you find the sauce too hot, pair it with their milkshake to counter the spice.
Island N’yog Fusion is a rare dining treat for health conscious individuals. It’s a mixture of vegetables with coconut-based sauce.
Another Island Fusion specialty is the Char-grilled Pork Ribs with three sauces – Diablo Sauce, Honey Hickory Sauce and Tex-Mex.
“Island Fusion’s goal is to provide you with fine foods and drinks, an ambiance of excellent service, relaxing decors, a variety of music for many tastes,” Ann said. “Our food are freshly grilled on hot charcoal to seal the flavors and juices,” Ann added.
