LUMPIA SISIG

Ingredients:
10 pcs. Lumpia wrapper
½ kilo pork tenderloin, cubed
1 cup   chicken liver, chopped
½ cup onions, chopped
½ tbsp. juice of calamansi
1 tbsp. olive oil
1/3 cup liquid seasoning
Salt and pepper to taste

Procedure:
1. Saute onions in oil
2. Add pork, let it cook thru & add chicken liver
3. Add the rest of ingredients
4. Season with salt and pepper

ADOBO PANINI

Ingredients:
2 pcs. pandesal
1 cup adobo, sliced
½ cup mayonnaise
Salt and pepper to taste
1 big  tomato
Cream cheese

Procedure:
1. Combine adobo & mayonnaise. Season with salt and pepper.

To Assemble:
1. Spread adobo mixture over the tomato & topped with cream cheese. Grill.
2. Serve with camote chips.

KARE-KARE WITH CITRUS BAGOONG

Ingredients:
¼ cup oil
1 kilo ox tail
½ cup garlic chopped
1 cup onion
2 cups water(put in as much water to cover the ox tail)
2 cups white wine
2 tbsps. whole peppercorns
1 tbsp. salt
1 large bay leaf

Procedure:
1. Clean Oxtail
2. Combine all ingredients into the stockpit & simmer
3. Till ox tail are tender

4. Drain & Set aside ox tail
5. Reserved beef stock

Sauce:
3 tbsp. olive Oil
3 tbsps. atsuette Oil
1 tbsp. garlic
1 tbsp. shallots
½ cup peanut butter
1 tsp. dried rosemary leaves
1/3 cup beef stock
½ cup ground peanuts

Procedure:
1. Saute Onion & garlic in olive oil & annatto oil
2. Add 1/3 cup of beef stock. Simmer
3. Add 1/3 cup peanut butter
4. Season with salt & pepper & rosemary
5. Add ground rice to thicken & Ground peanuts

Citrus Bagoong:
¼ cup olive oil
¼ cup garlic chopped
½ cup onions, chopped
½ cup bagoong alamang
1/3 cup brown sugar

Chillies
Lemon zest
½ pc lemon (extract the juice)
¼ cup chives (chopped)
2 pcs. calamansi (extract the juice)
